Nanbu ironware has been produced for a long time in Morioka and Oshu cities in Iwate Prefecture

Its tasteful surface pattern and high functionality have attracted attention not only in Japan but also overseas

In this article, we will introduce the appeal of Nanbu ironware, a traditional craft of Iwate Prefecture, as well as restaurants where you can enjoy delicious local cuisine using Nanbu ironware, and easy ironware dishes you can make yourself

What is Nanbu ironware?

Morioka ironware began in the 17th century when the lord of the Nanbu domain invited kettle makers from Kyoto to produce tea kettles, while Oshu ironware is said to have begun in the Heian period when Fujiwara no Kiyohira invited ironworkers from Omi to make military equipment

Nanbu ironware is made primarily from pig iron and features artistic patterns on the surface. It is rust-resistant, long-lasting, and has excellent heat retention properties, conducting heat evenly

The various surface patterns, such as razor blades, animals, and plants, are handcrafted one by one from molds, and the finishing touch is a coat of lacquer to prevent rust

Currently, there are 730 craftsmen at 74 locations, and annual production is said to be 9.2 billion yen

In 1975, it became the first craft to be designated as a traditional Japanese craft, and currently there are 21 traditional craftsmen designated by the Minister of Economy, Trade and Industry

In addition to traditional black-lacquered ironware, colorful teapots have also been produced in recent years and have become popular in Europe. They were even exhibited at the Shanghai World Expo in 2010, and as Chinese tea has become more delicious, they have also become popular in China

In addition to iron kettles, products made from Nanbu iron include a variety of other items that take advantage of its characteristics, such as grill pans, pots, wind chimes, and accessories. The benefits of Nanbu ironware products include the following:

  • The invisible surface irregularities created by the mold prevent sticking
  • By boiling the water, the iron gradually seeps out and helps replenish your iron intake
  • Minerals such as calcium and magnesium contained in tap water adhere to the inside of the iron kettle

It makes the water smooth and delicious

Soft water, which is low in minerals, is ideal for making Japanese tea, coffee, cooking rice, and for extracting the umami components of kelp and bonito flakes to create delicious soup stock
