Kozuyu

Kozuyu, originally created as a samurai dish, is still often made today during Aizu New Year's celebrations and ceremonial occasions. It is made by simmering ingredients such as taro, carrots, and dried shiitake mushrooms in a broth made from scallops. It is a lightly flavored, nutritious soup

At Tsurui-tsutsu in Higashiyama-cho, you can enjoy Kozuyu soup when you order a set meal or a bento box. The restaurant is housed in a relocated mansion built in the Meiji era (1897-1912), and antiques and other items are displayed inside.
In addition to Kozuyu soup, you can enjoy a variety of local dishes to your heart's content, such as wild vegetable soba noodles, boiled dried cod, and Aizu dengaku.

Dengaku

Dengaku, now widely known throughout Japan, is said to have originated in the Sengoku period when samurai grilled ingredients on skewers.
Aizu-Wakamatsu was a famous production area for miso, so dengaku was made with miso. Today, various restaurants are offering their own unique versions of dengaku.

Mitsutaya, a long-established miso brewery that has been in business since 1834, has converted its miso storehouse into a restaurant and is renowned for its dengaku. The popular "Dengaku Course" costs 1,150 yen for 7 skewers of 6 types of miso, and involves dipping konjac and tofu in miso. What's great is that they offer 5 types of their own miso, including sweet miso and yuzu miso, to match the ingredients
