  • Gyoza wrappers…17 pieces
  • Water (for glue)…1 tablespoon
  • Minced pork…100g
  • Cabbage…150g
  • Chive…20g
  • (A) Cooking sake…1 tablespoon
  • (A) Mirin…1 tablespoon
  • (A) Sesame oil…1 tablespoon
  • (A) Oyster sauce…1 tablespoon
  • (A) Chicken soup base...1 teaspoon
  • (A) Grated garlic…1 teaspoon
  • (A) Grated ginger…1 teaspoon
  • Salad oil…3 tablespoons
  • Hot water…50ml

How to make

  1. Finely chop the chives.
  2. Chop the cabbage into small pieces. Place in a heat-resistant bowl and heat in a 600W microwave for 2 minutes without covering with plastic wrap to remove heat.
  3. Add ground pork and (A) to a bowl and mix.
  4. Add 1 and 2 and mix well until well mixed. Place it on a gyoza skin, moisten the edges with water and wrap it up.
  5. Heat salad oil in a frying pan over medium heat and arrange 4. Cover and cook until golden brown, then pour hot water, cover and cook over high heat.
  6. Once the water has evaporated and the meat is cooked through, remove it from the heat. Arrange on a plate and add soy sauce to complete.

If you want to eat authentic disc gyoza, the best place to go is around Fukushima City, but in the Tohoku region (especially in Fukushima and Miyagi), supermarkets also sell gyoza under the name "disk gyoza."

The dumplings are sold arranged in a round container, and if you place them in a frying pan and fry them, you'll have a disc of dumplings.

Normally sold gyoza can be laid out in a circle in a frying pan to form a disc-shaped dumpling, but if you bake a lot of gyoza side by side, it will look more like a disc-shaped gyoza.
