That's Cybele Factory.
This is where the history of rusk in Japan began.

This time, we will be introducing Cybele Factory, a sweets factory that the whole family can enjoy.

What is Cybele?

Ciber is a company headquartered in Yamagata that manufactures and sells baked goods such as rusks.
Founded in 1966.
This is a long-established rusk factory with a history of 50 years.

Rusk is a type of biscuit, a baked confectionery made from thinly sliced ​​French bread baked twice.
It was originally a sweet that was devised as a way to enjoy leftover or unsold French bread.

The history of Japanese rusk begins in 1994.
Cybert started out by baking French bread for rusks.
Although this is common practice now, it was groundbreaking at the time, and there was a lot of opposition from bakers.

Cybele's rusks are French bread specially made for rusks, so they have a lot of air bubbles inside, giving them a crispier and special texture than regular rusks.
In addition, because we do not use scraps or leftovers, the French bread before cutting has a unique diagonal cut called a coupe.
When you slice this thinly, the cross section of the rusk becomes a beautiful heart shape!
