Although it is called tofu, it is the same as the so-called koya tofu and frozen tofu, and is a type of dried food. It is made from firm tofu that has been frozen, aged, dehydrated, and then dried.

Tateshiyama's frozen tofu is traditionally sold in a retro shape tied with straw, but it's actually gaining attention again because it's healthy and perfect for today's times!


Traditional ingredients made by the people and climate of Fukushima

It is said that the method of making frozen tofu was introduced from Kyoto to Fukushima during the Edo period, but it began to be popularly made in Mt. Tatsushi from the Taisho period onwards.
The reason for this is that the climate of Mt. Tateshi, where winter temperatures drop below freezing and cold winds blow, is ideal for making frozen tofu.
Tateshiyama's frozen tofu is a food product made with the careful handwork of farmers during the off-season and the natural power of Fukushima. Nowadays, machines are used for manufacturing, and drying is often done indoors, but the pride of the people of Tateshiyama is still alive in the deliciousness that remains the same as in the past.

Unlike regular tofu, which has a high water content, frozen tofu is highly nutritious.
For example, it contains about 7 times more protein than firm tofu.
Not only is it rich in amino acids, it is also low in carbohydrates. Moreover, it contains soy lecithin, soy saponin, vitamin E, isoflavones, calcium, magnesium, iron, and dietary fiber, making it the perfect food for people who want to lose weight healthily.


Delicious ways to eat frozen tofu, from standard to original

Tateshiyama's frozen tofu is slightly thinner than regular Koya tofu, and has a moist and smooth texture. So even if you use it for cooking, it will be very delicious.

It is also recommended to add flavor to it, then coat it and make it into tempura, fried food, or fried chicken.
Try using it in place of meat. Once rehydrated, squeeze the frozen tofu, soak it in milk, dip it in a beaten egg, and fry it in a frying pan with butter to make it like French toast. Serve with maple syrup or honey.
