Junsai is a perennial aquatic plant of the Nymphaeaceae family. It is characterized by the stems and floating leaves that grow from rhizomes that grow from the bottom of swamps and ponds, covering the water surface like lotus leaves in summer

The slimy young shoots and petioles are picked and eaten, but the fresh watercress can only be eaten from June to early August

According to the results of the "2010 Regional Specialty Vegetable Production Survey" conducted by the Ministry of Agriculture, Forestry and Fisheries in 2010, the water shield harvest yield was as follows:

How to eat Junsai

  • Ice water (appropriate amount)

How to make

  1. Put the Junsai into a bowl of water and wash it lightly
  2. Drain the water through a colander, being careful not to remove the slime from the Junsai
  3. Boil water in a pot and add the Junsai once it boils
  4. Once the water shield has turned green, place it in ice water to cool
  5. Once cooled, drain in a colander

After this, if it is hot, you can stimulate your appetite by combining it with pickled plums as an ingredient in chilled dashi chazuke, or if it is cold, you can add it to miso soup in combination with mitsuba or grated kelp

World Water Shield Picking Championship

The World Water Shield Picking Championship is held in Mitane Town, Akita Prefecture

The competition involves competing to see who can harvest the most crops within a one-hour time limit, and it is so popular that participants come from overseas, with slots filling up within a few hours of applications opening

There are solo and pair divisions, and the winning weight limit in the solo division is around 1,500g, and in the pair division it is around 1,600g

Due to the COVID-19 pandemic, the event has been canceled in 2020 and 2021, but if you would like to participate, please contact the Tourist Information Center
