[Miyagi] The best feast in Sendai! What is the secret hidden in beef tongue? ?
table of contents
When I think of three things that Sendai is famous for, it's safe to say that ``Date Masamune'' and ``Beef Tongue'' always come up.
Especially when it comes to beef tongue, people who have only eaten it at regular Yakiniku restaurants when they try it in Sendai rave about it, saying, ``It's so delicious that it changes your outlook on life.''
In the past, I had the impression that only tourists who were able to enjoy sightseeing ate beef tongue, but recently, it has become so popular that office workers in Sendai are lining up to eat it at lunchtime. This time, I will introduce Sendai beef tongue!
Sendai beef and Sendai beef tongue are completely different! ?
Sendai beef is Sendai's branded beef.
In Japan, only meat that is ranked A-5 or B-5, which is the highest rank in terms of meat quality, is allowed to be named in the ranking based on the "Carcass Trading Standards" conducted by the Japan Meat Grading Association. It is the only super branded beef.
“I can’t believe I can eat beef tongue like that!”
This is unfortunate news for all the tourists who come here with high expectations.

Sendai beef tongue is produced in America.
This may seem obvious, but there is no way you can casually eat ultra-high-quality brand beef for lunch. Moreover, speaking of beef tongue, it is a rare part that can only be harvested once per cow.
If you could eat Sendai beef tongue, it would probably be at a super high-end restaurant or a restaurant that doesn't allow first-time customers.
So why is it called Sendai beef tongue? In fact, grilled beef tongue is said to have originated in Sendai.
It was developed by the owner of a yakitori restaurant in Ichibancho. Grilled beef tongue made with cow tongue and tail soup made with tail became famous nationwide as they suited the Japanese taste buds.
By the way, this person is from Yamagata Prefecture.
Charm of beef tongue
The ingredients are from America, the developer is from Yamagata Prefecture, and the beef tongue is not very firm, but the taste is top notch.
Compared to typical Yakiniku restaurants, Sendai beef tongue is served in extra-thick slices at every restaurant. The meat is thick and filling, yet easy to bite into, and the crunchy texture is addictive no matter how many times you eat it. In addition to salt, seasonings with soy sauce or miso are also standard, but my recommendation is definitely salt. Although it is simply seasoned with salt, the flavor that overflows from the ingredients fills your mouth with excitement.
The tail soup is a tail soup made from bone-cut beef tail meat that is slowly simmered and the stock is squeezed out to give it a punch. The squeezed tail is also served in the soup, and it melts in your mouth, creating an addictive flavor.
I'm getting hungry as I write this.

If you order Sendai beef tongue grilled as a set, most restaurants will serve you three pieces each. The pickles that come with it are perfect for resetting your palate. People from the past are often impressed with how they came up with this exquisite set.
At the end of the dish is miso nanban (green chili peppers pickled in miso).
As the developer is from Yamagata, most of the shops use green chili peppers from Yamagata Prefecture. It's a bit spicy, so be careful when eating it with small children!
The staple food is barley rice.
If you want to eat rice with rice, try ordering the beef tongue bowl. Depending on the restaurant, they may also use barley rice for their rice bowls, so be sure to check with the staff before ordering.
Other beef tongue menus
There are various other menu items besides grilled beef tongue.
Major foods include stew, curry, and meatballs.
There are other ways to eat it, such as tongue sashimi and beef tongue sushi. This dish uses Sendai Kuroge Wagyu beef rather than American beef, so it is very hygienic (though you eat at your own risk).
For souvenirs, in addition to retort grilled beef tongue, there is also smoked beef tongue, and at the recent Jojo exhibition, miso-marinated beef tongue was sold as a collaboration item (currently not available for purchase).
If you've come to Sendai, why not try not only grilled beef tongue but also a variety of other ways to eat beef tongue?
