They produce a unique type of miso that uses the geothermal heat from local hot springs in Owani for fermentation and maturation. In fact, thismethod of fermentation and maturation using geothermal heat is a traditional method of Marushichi andis said to be the only one of its kind in Japan.

By using the heat from the hot springs, the fermentation and maturation period is reduced by half compared to natural fermentation, and miso can be stably maturated and fermented even in winter

While the basic ingredients are the same for both, the manufacturing methods and maturation periods differ.Red miso is made by steaming soybeans and using them whole without removing the skins, then fermenting and maturing them for about 4 to 5 months.White miso is made by boiling soybeans, removing some of the skins, steaming them again, and then fermenting and maturing them for about 1.5 to 2 months.
