We will also introduce recommended seasonings and where to buy them, so be sure to purchase some as souvenirs when you visit Aomori

What is Marushichi Tsugaru Miso Soy Sauce, beloved by locals?

What kind of company is Marushichi Tsugaru Miso Soy Sauce, loved by locals?

The only place in Japan where miso is made using hot spring heat!

JR East Owani Onsen Station

The head office and factory of Marushichi Tsugaru Miso and Soy Sauce Co., Ltd. is located in Owani Town, a town famous for its hot springs

They produce a unique miso that is fermented and matured using the heat from the local Owani hot springs. In fact, fermentation and maturation using the heat from the hot springs is a traditional Marushichi method, and is said to be the only one of its kind in Japan.

By using the heat from the hot springs, the fermentation and maturation period is reduced by half compared to natural fermentation, and miso can be stably maturated and fermented even in winter

Owani Onsen Bean Sprouts

also cultivates "hot spring bean sprouts" using the heat from hot springs , and their unique flavor and crunchy texture will have you hooked!

Introducing Marushichi's recommended seasonings!

The products we handle at Marushichi are:

  • miso
  • soy sauce
  • Soup/Sauce
  • Koji

The four types above

They also sell gift sets that include miso and soy sauce, freeze-dried miso soup, and amazake (sweet sake) made with Marushichi's koji

Yunomachi Tsugaru Miso White Miso and Red Miso

Marushichi sells red miso and white miso, both of which have the same basic ingredients but are made using different methods and aging periods. Red miso is made by steaming soybeans without removing the skins, and is fermented and aged for about four to five months , while white miso is made by boiling the soybeans, removing some of the skins, steaming them again, and then fermenting and aging for about one and a half to two months.

White miso is mild and can be used in a variety of dishes, such as miso soup and salads, while red miso has a sharp flavor that makes it perfect for stir-fries as well as miso soup.

Kikujirushi Soy Sauce

Marushichi sells a variety of soy sauces, but the one we would most recommend Kikujirushi Soy Sauce .

The people of Tsugaru love sweet, rich flavors, and Marushichi's Kikujirushi Soy Sauce is a perfect match for their taste buds! It has a good balance of umami and sweetness , and some locals say that they can't get the flavor right when making simmered dishes without Kikujirushi Soy Sauce.

there is a product called Matsujirushi Soy Sauce that has a similar package it has less saltiness and sweetness than Kikujirushi Soy Sauce and has a lighter taste.

Kelp soy sauce

Konbu soy sauce is a luxurious blend of honjozo soy sauce and Oma-produced konbu

Although it doesn't have the sweetness of regular noodle soup, the kelp stock makes it suitable for any dish, and it has a deep flavor that goes perfectly with simmered dishes, soups, and grilled fish !

It is milder than the Kikujirushi soy sauce introduced above, so when used as sashimi soy sauce you can really taste the fish

Tsugaru Yakiniku Sauce (Soy Sauce and Miso Flavors)

In fact , Tsugaru Yakiniku Sauce is a hidden gem of Marushichi .

There are two types, soy sauce and miso, both of which use , garlic , and apple vinegar from Aomori Prefecture The soy sauce version is based on brewed soy sauce and has a strong peppery flavor that gives it a refreshing tangy taste . It is recommended not only as a sauce for yakiniku, but also as a marinade for steak and fried chicken.

The miso version has a sweet and gentle taste with a mellow miso and ginger flavor .

It goes well with any ingredients, so having one bottle is sure to come in handy!

By the way, it is also recommended to use it to season fried rice
