December 3rd has been designated as "Hittsumi Day" by the Iwate Prefecture Fresh Noodle Cooperative, based on the wordplay of "Hittsumi (1) (2) (3)."

Hittsumi is a typical dish of the "shitonemono" culture, made by kneading rice flour, wheat flour, buckwheat flour, etc. with water. The name is thought to be derived from the Iwate dialect "hittsumamu," which means "to tear by hand," because the dough is made by kneading wheat flour with water and rolling it out thinly, then tearing it by hand and boiling it

In Miyagi Prefecture, it is known as "hatto" or "kiribatto."
